Moisture Control Keeps Sprouts Fresh

When you’re responsible for processing around 17,000 tonnes of brussels sprouts annually, maintaining the freshness and quality of every single vegetable is crucial. One leading agricultural business, known for supplying some of the UK’s top supermarkets, faced an unexpected issue during peak season. The company, which handles more than 60 million servings of sprouts each year, needed to ensure its produce moved efficiently from field to fridge without compromise. But when heavy rainfall threatened this delicate balance, Polygon was brought in to help.

Challenge

Persistent bad weather had caused excess surface water to build up on the harvested sprouts, creating problems inside the refrigerated processing plant. The added moisture risked compromising the product’s quality and the efficiency of the operation. The challenge was clear: remove the surface water without affecting the low ambient temperatures needed to keep the sprouts below 5°C. Introducing a drying phase that worked within these parameters would require a precise, tailored solution.

Solution

Working closely with the client, Polygon’s technicians adapted the existing airflow system used in the processing setup. Sprouts are transported in large containers and cooled via a sealed plenum chamber containing a refrigeration coil. To add drying capability, a TCS1350 dehumidifier was integrated into the plenum system, allowing moisture to be removed while keeping the sprouts at the required temperature. This carefully engineered solution ensured minimal disruption and maximised efficiency.

Results

Each container carries around 9.5 tonnes of sprouts, or roughly 633,000 individual vegetables. Polygon’s analysis found that just 0.03 grams of water per sprout needed to be removed for optimal condition. With a 12-hour cycle designed to extract 1.6kg of water per hour, the new system successfully removed the necessary moisture. As a result, the sprouts reached the packing line in perfect condition, maintaining product quality and protecting supply chain performance.
